A Pretty Good Day

I worked the last couple of days, which usually means that my first day off is filled with chores and errands, and tomorrow is no exception. I need to grocery shop, mail out the last book giveaway, deal with some school issues, shred the enormous zucchini I brought home from work, help my mother clean one of her guest cottages and take a blowtorch to the house.

A big blowtorch.

And most importantly, I need to stop into the credit union to deposit the $70 I made over the past couple of days selling Stuff on Craigslist.

Sounds like a pretty good day.

And just what, pray tell, are you planning to DO with all that shredded zucchini? LOL. I found myself with a ton of zucchini this summer, and so I tried Kristen’s recipe for zucchini patties. I was amazed at how good they were — even my super-picky-eater daughter ate them without complaint.

I’ve bought a few things on Craig’s List, but I haven’t ever sold anything that way. I have listed a few “free” things there, though, and I love how people just come and take them away!

I agree. I don’t really like zucchini, so I was very surprised when I found that I liked the patties! lol

I have a major zucchini crisis. My husband came home with the absolute biggest zucchini I have ever seen. If I saw a picture of it I would think it was photo shopped 😉 One of the guys at work sees a zucchini sucker and knew who he could fob it off on. There are MORE of them to come apparently. I have 6 large zucchinis in my fridge as it is. My kids don’t like zucchini(why they will eat spaghetti squash but not zucchini is one of life’s mysteries..lol) so my husband and I are about to get entirely overwhelmed. We have come down with zucchini-itis. I just went to the grocery store the day before the zucchini from hell came home, so i now have a fridge full of asparagus, cauliflower, broccoli, etc all to be eaten as well.

Any suggestions for a zucchini recipe rescue? lol I am not kidding when I tell you it is huge. ND spawns really big garden zucchinis, but this zucchini is like, giant, state fair prize winning, as big as the massive pumpkins you see, zucchini.

I grate it and add it to things like baked goods and spaghetti sauce. They don’t even know it is in there.

Shred it and freeze it in ziplocs in the amount that your favorite zucchini bread calls for (mine is 2 cups).

LOVE the credit union. Just broke up with our stupid, ineffective commercial bank and moved across the street to the credit union. The service and the mood are so pleasant! Now every time I see an ad for a big bank, I am thankful that I am not paying for advertising when I deposit a check.

We also switched to a credit union—the Boeing one—here in Seattle and I LOVE it and am wondering why we stuck with Giant Evil Bank for so many years (laziness, worrying about changing everything online…but it turned out to be easy). When I first started and had to call a few times, speaking with a real human being (fluent in English) here in my own city was such a joy, they were so pleasant and helpful it almost felt too good to be true. Six months later, they are still impressing me.

Here is my mother’s recipe for zucchini bread. I was never a big veggie fan as a kid, but always liked this. I’ve heard of recipes that use chocolate chips in zucchini bread too.

3 c flour
1.5 c sugar
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
2 c shredded unpeeled zucchini
1 c chopped nuts
1 c raisins
3 eggs
1 c oil

In large bowl, stir together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins. In another, beat eggs and oil. Pour over flour mixture and stir until moistened. Turn into greased 9x5x3″ loaf pan. Bake at 350 degrees for 1.5 hour or until pick inserted in center comes out clean. Cool in pan 10 min. Cool completely on rack.

I make zucchini chocolate chip muffins that the kids love. (and my son hates, i mean hates all veggies!) but loves these…I keep them in the freezer, and pop them out when he wants them, can also throw in the mirowave for a few seconds…
Got the recipe from allrecipe.com (only difference is I use apple sauce instead of the oil, and one container vanilla yougart for the milk, but you might need a table spoon or two of milk, if the muffins need a bit more moisture., also 1 cup regular flour, and 1/2 cup whole wheat)
I make mini muffins.

Also my mom makes a chocolate zuchini cake that is great, and also zucchini bars that everyone loves…
I do like someone suggested, grate it up, and put in freezer in sizes that your recipe calls for. (mine is 1 cup)

you can also make zucchini parm, (just like eggplant but with zucchini)
even if breaded and fried (i know bad for you) with mayo and horseradish dipping sauce.. yummmmmmm

U can also use zucchini peeled and chopped along with apples to make an apple cobbler….neither my hubby or kids new…just make sure you don’t use the seeded part if you have a huge zucchini
