Harry Potter Makes Stir Fry

My husband worked a 5 A.M. to 5 P.M. shift yesterday, and it wasn’t until he was almost home that it occurred to me that it would be nice of me to start thinking about preparing dinner. (Housewife of the year, I ain’t!) Luckily I attended the Hogwarts School of Witchcraft and Leftovers Wizardry, with a focus on last minute meals, so all was not lost.

A quick rummage through the fridge turned up a significant, yet dwindling amount of Yakisoba stir fry from Friday, an already chopped container of cabbage from last week’s burritos and a big bag of sale purchased organic broccoli. (The “organic” part of the “organic broccoli” is irrelevant, but I wanted to appease all you food-o-phile bullies out there in cyber-ville.) Wok in hand, I was able to quickly swirl enough broccoli and cabbage into the leftovers to prepare a delicious, yet healthy meal for my ravenous wizards.

Everyone got fed, the last bit of cabbage got incorporated into its third meal, (hooray for a focus on avoiding food waste) and I didn’t even have to resort to pulling out one of my Trader Joe’s emergency meals from the freezer. (A.K.A. “Meals that must not be named.”)

Now, if I could only do something about getting the house elf to finish up the dirty dishes. . . .

I love it!! We have leftover nights….I try to plan to cook enough to eat in one meal, not always possible. I enjoy a nigh off of cooking and there is usually something in there for everyone and if I whip up a salad to go with it…voila!

If you have a spare house elf, send him over! We could surely use one.

I could use a house elf or two! My son asked to borrow some money (he’s 11) and I told him he could work off the money by becoming my house elf. He’s a huge Potter fan so he knew what he was getting himself into!

Kidding! Your wizardry is no surprise to me, Katy.

My meal that must not be named would have to be either frozen pierogies or the TJ spinach/feta pie.

On a separate note–I thought of you today as I hung laundry outside (in February!)

Hanging laundry in February? Must have been drier than Oregon. We had crazy windy wet weather today.

I’m not being critical, but how long do you keep and then eat refrigerated leftovers? 4 days is my absolute limit. Actually, after 2 days I either freeze ’em or eat ’em.

At my house, we eat it until it’s gone. Why toss something that’s still good? I’ve got chili in the fridge that’s going on a week, and I’m eating it tonight. Since I quit eating meat and most dairy, I notice the dishes I make keep a lot longer. The fridge we bought a few years ago seems to keep things longer than any fridge I’ve owned before, too.
