Cheap Eats – Momeye's Coffee Cake

When you think of your grandmother, what delicious foods come to mind? Warm chocolate chip cookies? Spicy enchiladas?

My grandmother, dubbed Momeye, was famous for an unfortunate signature dish consisting of a can of spinach, plopped right into a pan to heat up. This delicacy was then enhanced with a splash of vinegar and served up to her seven children. “Bon appetit kids — hey, why are you gagging?”

Luckily, my grandmother had one recipe that redeemed her. And that, my dear readers, is her coffee cake. Momeye’s coffee cake is cheap, easy to make, super-yummy, and requires only those ingredients found in most everyone’s pantry. Perfect for brunches, desserts and potlucks. It will save you and your wallet from last-minute runs to the bakery.

Momeye’s Coffee Cake:

Mix together dry ingredients:

  • 3 cups of flour
  • 1-1/2 cups of granulated sugar
  • 2 Tablespoons baking powder
  • 2 teaspoons cinnamon
Mix together wet ingredents:
  • 3 beaten eggs
  • 1-1/2 cups milk
  • 1/2 cup (1 stick) melted butter
  • Mix the wet ingredients into the dry by hand (not by mixer) with a few quick strokes, as you would muffins.
  • Pour batter into a greased 9 X 13 pan.
  • Sprinkle either cinnamon sugar or brown sugar on top.
  • Bake at 325 degrees for 40 minutes.

I have made these additions/substitutions with delicious results:

  • Raspberries, blackberries, apples, blueberries, bananas.
  • Replacement of 1/2 cup of flour with oatmeal or whole-wheat flour.
  • Soy milk, egg substitute.

Momeye’s coffee cake recipe makes a hearty amount of food. Make sure to bring still-warm slabs to your neighbors.

This seemingly simple treat has been an incredible ace up my sleeve for many years.

Healthy? Not so much, but what’s life without a little sweetness?
